Olmos was too young for it. He needed a more pitted face, and Michael Hogan cast as his XO. Olmos is at his prime in Battlestar Galactica re-imagined - the best thing since TNG. I wonder how Patrick Stewart would have done as Admiral Adama.

Adama is a whiskey-drinking, authoritarian, battle-hardened old smoothie. His XO is an alcoholic with an eye patch. It would be completely awesome.
